Herbed Alabama Wild American Shrimp Dip

* 1 pound Wild American Shrimp, peeled & deveined, fully cooked
* 2 green onions, coarsely chopped
* 1 shallot, chopped
* 2 tablespoons chopped fresh tarragon
* 1 tbsp. honey
* 3/4 cup mayonnaise
* 3/4 cup sour cream
* 1/2 teaspoon hot pepper sauce (or more to taste)
* 1/4 teaspoon Worcestershire sauce (or more to taste)
* Salt & Pepper to taste

Place the shrimp, onions, shallots, and tarragon in the bowl of a food processor in two or three batches if necessary. Pulse on and off to obtain a smooth paste. Transfer to a bowl. Add the remaining ingredients and stir to mix well. Cover and chill at least two hours. (Can be made ahead and kept refrigerated for one day). Serve with crackers or toasted French bread slices.
